Tucked inside a heritage shophouse on Duxton Hill, our space echoes the timeless grace of our neighbourhood. We offer comfort with polish, service with subtlety, and the quietly confident cooking we’ve come to be known for — refined, but never excessive.

Paul Longworth
Chef-Owner
Steady, thoughtful, and exacting without the ego, Paul has long been a quiet stalwart of Singapore’s dining scene.
Over the years, he’s quietly shaped some of Singapore’s most beloved French restaurants, including Oenotheque by Wine Universe, Au Petit Salut and Rhubarb — which held a Michelin star for ten years — with a calm hand, sharp instinct, and a loyal following to show for it.


Ryan Tok
Head Chef
​Ryan is the kind of chef who lets flavour speak first. Unflappable on the pass and fluent in simplicity done right, he’s spent years honing his palate and intuition.
Before becoming Paul’s trusted right hand at Au Petit Salut, Ryan crafted ingredient-led, comforting dishes at Mag’s Wine Kitchen and cooked for discreet celebrities and discerning guests in Singapore’s top luxury hotels.

Oscar Yong
Supervisor​
A master of unobtrusive service and multi-tasking polyglot who speaks five languages, Oscar brings both warmth and precision to every table.
Before Encore, he trained in the UK and led front-of-house teams at L’Atelier de Joël Robuchon and Willow in Singapore — though you’re unlikely to hear it from him. What you will notice is a quiet grace that makes every guest feel like they're the only ones in the room.
